Bell Pepper and Oyster Boats

Makes 32 Appetizers

A crisp red pepper spear, a little cream cheese, a smoked oyster and voilá, an elegant hors d'oeuvre!

INGREDIENTS:
4 medium-size red bell peppers, seeded
1 can (3.75 oz.) Bumble Bee Fancy Whole Smoked Oysters, drained
2 small packages (3 oz. each) cream cheese, at room temperature
2 tablespoons lemon juice
1 teaspoon celery seeds
64 chive pieces, each 4 inches long

DIRECTIONS:
Cut each bell pepper lengthwise into 8 equal strips. If necessary, cut larger oysters in half so you have 32 pieces. In a bowl, beat cream cheese, lemon juice, and celery Seeds until smooth. Spread about 1 teaspoon of the mixture over end of each pepper strip, covering about 1.5inches of pepper; then place 1 oyster piece and 2 chive pieces on cheese. If made ahead, cover and refrigerate until next day.
